Mimo Restaurant and Bar at Four Seasons Hotel Nashvilleinvites guests to an evening of Southern flavours and fine Champagne at the Bubbles & Birds dinner on Thursday, August 21, 2025, hosted by Executive Chef Derek Simcik and the esteemed Champagne house Laurent-Perrier. This special event will feature three family-style courses with a curated selection of Laurent-Perrier by Beverage Manager Alexandre Renoue.

The evening begins at 6:30 pm with a welcome reception featuring a pour of Laurent-Perrier La Cuve Brut and a selection of passed bites.

At 7:00 pm, guests will be seated for a family-style dinner, beginning with a first course that offers a refined take on Southern classics. The opening spread includes Hoe Cakes with caviar and lemon crme; Pimento Cheese Straws; Pickled Shrimp with cucumber variations; Fried Oysters topped with scallion relish, each thoughtfully paired with another pour of La Cuve Brut.

The main course brings a refined take on comforting classics. Guests will enjoy Southern Fried Chicken with pickled onion salad; Mac n Cheese Gratin with white cheddar and goat cheese; Succotash with corn and oven-dried tomatoes; Chilled Potatoes dressed with dill, cucumbers and green onions. This course is paired with the elegant Laurent-Perrier Vintage 2015.

Dessert will showcase a fruit-forward Southern finale, Georgia Peach Crostata, matched with Laurent-Perrier Ros. To conclude the evening, guests will be treated to a surprise toast, delivering a luxurious finish to the experience.

Tickets for Bubbles & Birds are USD 120 per person. Reservations can be made through OpenTable or by calling the restaurant at +1 615 610 6990.

Guests will be able to enjoy up to three hours of complimentary valet through the Hotel.
